5 Delicious Fall Recipes to Warm Your Soul

Fall is the perfect season for enjoying good food. The weather gets cooler, and the leaves turn beautiful shades of red and orange. It’s the ideal time for warm, comforting meals that make you feel cozy inside. These five recipes are just right for fall. They’re not only delicious but will also fill your home with wonderful aromas. Grab your spoons and let’s jump right in!

1. Hearty Pumpkin Soup

Ingredients:

  • 2 cups pumpkin puree (canned or homemade)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Salt and pepper to taste
  • Olive oil for sauteing

Instructions:

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add diced onion, garlic, carrot, and celery, sautéing until soft and fragrant.
  2. Stir in the pumpkin puree, cinnamon, nutmeg, salt, and pepper. Let it cook for a few minutes, releasing the rich autumn flavors.
  3. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
  4. Use an immersion blender (or transfer to a blender) to blend the soup until smooth.
  5. Stir in the heavy cream and let it simmer for another 5 minutes.

2. Apple Cider Braised Chicken

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 apples, cored and sliced
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • 2 sprigs fresh rosemary
  • 2 cloves garlic, minced

Instructions:

  1. Season chicken thighs with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown, about 5 minutes per side.
  2. Remove chicken from the skillet, then sauté the onions and apples in the same pan until they soften.
  3. Stir in garlic and cook for 30 seconds.
  4. Pour in apple cider and chicken broth, add rosemary sprigs, and return the chicken to the skillet.
  5. Simmer on low heat for 25-30 minutes, until the chicken is tender and cooked through.

3. Butternut Squash Risotto

Ingredients:

  • 1 small butternut squash, diced
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups vegetable broth, warmed
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh sage leaves (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper, then roast for 25-30 minutes until tender.
  2. In a large saucepan, saute the onion in olive oil until translucent. Stir in the Arborio rice and cook for 2-3 minutes.
  3. Pour in the white wine and cook until absorbed.
  4. Gradually add the warm vegetable broth, one ladle at a time, stirring until absorbed. Continue for 18-20 minutes until the rice is creamy and al dente.
  5. Fold in the roasted squash and Parmesan cheese. Season with salt and pepper.

4. Maple Glazed Roasted Vegetables

Ingredients:

  • 4 cups mixed root vegetables (carrots, parsnips, sweet potatoes, Brussels sprouts)
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Fresh thyme (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C). Toss the vegetables with olive oil, maple syrup, balsamic vinegar, salt, and pepper.
  2. Spread the veggies on a baking sheet and it is best to roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  3. Garnish with fresh thyme, if desired, and serve hot.

5. Spiced Apple Crisp

Ingredients:

  • 6 cups sliced apples (mix of sweet and tart)
  • 1 tbsp lemon juice
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup cold unsalted butter, cubed
  • Vanilla ice cream or whipped cream (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Toss the apple slices with lemon juice, sugar, cinnamon, nutmeg, and cloves. Transfer to a greased 9×13-inch baking dish.
  2. In another bowl, combine oats, flour, and brown sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Sprinkle the topping over the apples and bake for 40-45 minutes until golden and bubbly.
