Ingredients:
- 4 bone-in, skin-on chicken thighs
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 2 apples, cored and sliced
- 1 cup apple cider
- 1/2 cup chicken broth
- 2 sprigs fresh rosemary
- 2 cloves garlic, minced
Instructions:
- Season chicken thighs with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown, about 5 minutes per side.
- Remove chicken from the skillet, then sauté the onions and apples in the same pan until they soften.
- Stir in garlic and cook for 30 seconds.
- Pour in apple cider and chicken broth, add rosemary sprigs, and return the chicken to the skillet.
- Simmer on low heat for 25-30 minutes, until the chicken is tender and cooked through.
3. Butternut Squash Risotto
Ingredients:
- 1 small butternut squash, diced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 4 cups vegetable broth, warmed
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh sage leaves (optional)
Instructions:
- Preheat the oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper, then roast for 25-30 minutes until tender.
- In a large saucepan, saute the onion in olive oil until translucent. Stir in the Arborio rice and cook for 2-3 minutes.
- Pour in the white wine and cook until absorbed.
- Gradually add the warm vegetable broth, one ladle at a time, stirring until absorbed. Continue for 18-20 minutes until the rice is creamy and al dente.

Ingredients:
- 4 cups mixed root vegetables (carrots, parsnips, sweet potatoes, Brussels sprouts)
- 2 tbsp olive oil
- 2 tbsp pure maple syrup

Instructions:

- 1 tbsp lemon juice
- 1/2 cup granulated sugar

- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup cold unsalted butter, cubed

Instructions:
